chocolate nutella cookies


It's been so long since I baked these cookies that I couldn't even remember where I found the original recipe. Thankfully it has come to me.  I baked these way back in August and have been saving them for a day when I don't have the time to blog anything else.  Yep, that's today.  Lots of other things I need to focus on.  The only thing I didn't consider was how much I would now be craving these cookies.  


Chocolate Nutella Cookies - adapted from Simply Recipes
makes 6 dozen

3/4 cup unsalted butter, room temperature
3/4 cup brown sugar
3/4 cup white sugar
1 cup nutella
1/2 teaspoon vanilla
2 eggs
2 cups, plus 2 tablespoons all purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup chopped hazelnuts

Preheat oven to 350 degrees F.  Cream butter in an electric mixer until light and fluffy, approximately 3 minutes.  Add the sugars and Nutella, mixing until combined.  Be sure to scrap down the sides of the bowl during this process.

Add the eggs one at a time, beating for 30 seconds between each egg.  Add the vanilla and combine for a further 10 seconds.

Sift together the flour, cocoa powder, baking soda and salt.  Mix into the butter mixture on low speed until well combined, scraping down the sides as needed.  Fold in the chocolate chips and hazelnuts.  Chill in the fridge for 10 minutes.

Spoon tablespoon sized drops of dough onto parchment lined baking sheets.  Bake for 10-12 minutes.  Allow to cool on the sheet for a couple of minutes before transferring to a cooling rack.
