Jesse and I made these popsicles yesterday. Of course he needed to try them this morning. I realize cherry season is almost over, so you better move on this recipe quick if you want to give it a try.
Cherry Vanilla Popsicles - adapted from Mark Bittman
makes 6 popsicles
2 cups pitted cherries
3 Tablespoons sugar
2 teaspoons freshly squeezed lemon juice
1 teaspoon vanilla
Puree all the ingredients in a blender. Strain through a fine meshed sieve. Pour the mix into popsicles molds and allow to freeze for a minimum of 4 hours, or until completely solid.
