It's been a little while since I posted a recipe and I thought of this one because it is such a sunny appetizer to match the sunny day we are having here today. Here is my version of mango salsa.
Mango Salsa adapted from Crazy Plates
3 large mangoes, peeled and diced
1/4 cup minced red onion
Juice of one lime
1/4 cup chopped fresh cilantro
2 tsp sugar
3 tsp olive oil
3/4 tsp ground cumin
1/4 tsp salt
Combine all ingredients in a medium bowl. Mix well.
Let salsa stand at room temperature for 30 minutes before serving. Serve with tortilla chips. Cover and refrigerate any leftovers.
