roasted cauliflower


There is something special about roasting vegetables.  The natural sugars caramelize and make veggies taste so amazing.  I just had never thought of using cauliflower.  Then I saw a chef prepare this on the Food Network a year or so ago.  I think the chef even described the cauliflower as tasting like vegetable candy.  I had to try it.  Plus it is such an easy vegetable dish to make while preparing the rest of supper.  It's a no brainer for me.

Roasted Cauliflower - serves 4

1 head cauliflower, cut into florets
2 Tablespoons extra virgin olive oil
1/2 teaspoon kosher salt

Preheat the oven to 450 degrees Fahrenheit.
Toss the cauliflower florets with the olive oil and salt, spreading into an even layer on a cookie sheet.  Roast in the oven, stirring occasionally, for 25 to 30 minutes.  The cauliflower will be golden brown and tender.
